  • Made a really good halibut dinner last night

    No real recipe sort of winged it. I think it was the best meal I ever made. Figured I'd post it here in case you guys wanted to try it. I'm sure it would be good with almost any fish.

    Coarsely chopped 1/2 large white onion and 1 yellow bell pepper (each into pieces about 1/2" wide by about 1" long) and about 4 or 5 cloves of garlic, also coarsely chopped and threw it into a skillet with olive oil. Sea salt and freshly ground pepper. Medium heat until soft and slightly browned.

    While that was cooking, I drained and rinsed a bottle of pitted kalamata olives. Coarsely chopped those and threw it in with the onions, pepper and garlic.

    Next up, drained and rinsed a can of lentils and can of small white beans. In the pan it went.

    Finally opened a can of peeled plum tomatoes and threw the liquid in the pan. Quartered the tomatoes and threw them in as well.

    Seasoned the mixture with thyme, mexican oregano and ground cummin.

    When mixture was hot I put about 1 1/3 lb halibut fillet, skin side down (no skin though) in the middle of the pan and covered it with the vegetables. Covered the pan and threw it in the oven at 350 degrees for about 20 minutes.

    It came out great!

    Oh, forgot to add, served it with Spanish rice.

        Hallibut is a very nice fish, specially from the Hudson. lol
        It is a shame when people demanding tolerance, have no tolerance

          Was it a special occasion? Or did you just make it for the halibut?

            That sounds awesome. I'm starting to learn to cook more that the wife got a full time job after a decade raising kids. I'd love to try this, just need to get some halibut.

            Fresh halibut is outstanding. I've been to Alaska 3 times, and there is nothing like cooking it the day you catch it. Thanks for the recipe, I bet it could work with other fish too.
