  • Trying something new with a top roast

    Bought a 3 1/2# top round the other day and it accidentally froze in our refrigerator -- we took out a tray of baked ziti a couple days ago to thaw out in the fridge and it froze everything nearby, lol.

    So normally would bake a top round but when I found out it was frozen solid decided to make something in the dutch oven instead. Did a quick defrost by putting the top round in a zip lock bag and soaking it in cold water for about an hour or so. Might still be a little solid in center, ha, ha.

    So basically just used what we had available for this one. Browned the top round right in the dutch oven on the stove. Chopped a white onion, a few celery stalks, some carrots and garlic and saute it until tender. 2 cups of beef stock, a cup of water and about a quarter cup each of cider and red wine vinegar. Let it boil down for a couple minutes with the vegetables. Seasoned with about 1 tbsp each of rosemary and thyme and about 1/2 tbsp each of salt and white pepper. Threw it all in the dutch oven and added 1 can of red kidney beans and 1 can of white navy beans.

    Going to let it cook for about 3 hrs and see how it turns out...

    With all your cooking and gourmet types of appetizerings you post, I'm quite shocked you haven't made a forum for cooking or sub forum at least. Lol. By far, not even close to what an outdoor/survivor/camp cooker will have. Hehehe. Maybe if your SHTF bunker has a galley style gourmet cooking area with unlimited fresh supply of ingredients I can understand buuuuuut, camp cooking top of mind to me would be..hot dog,burgers,chicken,MREs and whatever you can catch while camping and attempted surviving.

      You've haven't camped until you've camped with me ha ha (or Mek for that matter). "Camp" does not necessarily mean "Survival" BTW. To each his own.

        Also I might add that this one, the chili and a few others could easily be done with beef, venison or others a top a cast iron stove at "camp". Just saying.

              Came out a little dry but tasty. Vinegar was just enough. Carrots and beans were really good. I think the meat would have been better had it not been frozen...

                  I can still find a use for my thumb, even though it no longer has a hole to finger.
