    IDK it sure tasted good...

    Coat in extra virgin olive oil. Add rosemary, thyme, salt and pepper to taste. Bake at 375 F for 15 minutes then 325 F until done. Total time 18 min per pound or until meat at center is 125 F.



    Let sit for 10 min before carving...



    We had Russet mashed potatoes and baby spinach sauteed in garlic and olive oil.

    Nice bottle of Amarone (marginally) optional.
