    I started off with a four pound pork belly that I cured for a week in the fridge.
    I did a honey Sriracha cure and a maple black pepper. I smoked them for couple hours on Saturday. They came out great

      Maple Bacon with Prague powder #1
      Time. 2 hours prep, seven days of curing, 2 hours of smoking.
      Makes. About 25 thick slices

      Ingredients
      1 pound of pork belly, not sliced
      1 1/2 teaspoons Morton's kosher salt
      1/2 teaspoon Prague powder #1
      1 1/2 teaspoons ground black pepper
      1 tablespoon dark brown sugar
      3 tablespoons Grade B maple syrup
      1/4 cup water

      Asian Bacon
      Ingredients
      1 pound of pork belly, not sliced
      1 1/2 teaspoons Morton's kosher salt
      1/2 teaspoon Prague powder #1
      2 tablespoons hoisin sauce
      2 tablespoons honey
      1 tablespoon soy sauce
      1 tablespoon powdered ginger
      1 teaspoon powdered garlic
      1 teaspoon Sriracha or other hot sauce
      1/4 teaspoon 5 spice powder
      2 tablespoons water

        Smoked at 200 until internal temp hit 150. I used cherry soaked in cider

                              That is a NICE looking bunch of meat!

                              I can still find a use for my thumb, even though it no longer has a hole to finger.
